Roasted Brussels Sprouts

Usually for Christmas Eve, my mom makes a honey ham and we make some of our favorite sides to go with.  In the past, we have made sticky rice, creamed corn, roasted sweet potatoes, scalloped potatoes and other of our favorite mom dishes.  This year, we decided on roasted sweet potatoes and butternut squash and scalloped potatoes.  I have wanted to roast Brusselssprouts so we decided to try that out on the family as well.

Merry Christmas everyone!

I am currently sitting here perfectly content after a fun-filled morning of making a Christmas breakfast and giving and opening presents with my family.  I tried out some Oatmeal-Almond waffles, which were delicious, (post to come) and my brother made some yummy monster omelets!

A Cornmeal Lesson and Butternut Squash Polenta Bake

I last posted about the Spinach and Brown Rice Casserole at the dinner party and promised the other recipes.  In addition to the casserole, we put together a Butternut Squash Polenta bake and I loved the colors in this dish.  The squash, polenta and basil combined to make a very aesthetically pleasing addition to the table.

Benefits of Japanese Soba Noodles

I am obsessed.  I can’t. stop. eating. these.  I’m not sure what it is.  Between the chewy texture, hearty taste, salty flavor, thin-ness of the noodles and intriguing color- I can't resist.  They were so good that I ended up eating half of the batch before I even tossed it with a sauce or seasoning.  Now I'm probably building them up (I always do that) but really, you need to try!

Jalapeño Black Bean Burgers

I think I just made the best thing I've ever made.  I know I say a lot of things are delicious, but this was phenomenal.  I got this recipe from Eat, Live, Run and wow, this is going in my permanent recipe book… for life.

They were so hearty, garlic-y and had a great kick with the jalapeño .  These black bean burgers are extremely healthy and vegetarian friendly.  The recipe calls for all natural ingredients and I only slightly panfried the patties.  I am not a vegetarian and I promise, even non-vegs will love this!
