Green’s Sweet and Spicy Kale Salad

I discovered Green Vegetarian Cuisine in San Antonio just a few weeks ago and I wish I knew about it earlier.  It is the only vegetarian and kosher restaurant in the area.  A lot of their food options are clean, high in fiber, high in protein and with loads of veggies.  I love it.  Not only is their food healthy, but they are eco-friendly with their energy efficient building, recycling bins and biodegradable packaging.  I highly recommend making a stop here!  Here are my favorites:

Mayo-less Broccoli Cashew Salad and Spinach Dip

As promised, I have include the Broccoli Cashew Salad and Spinach Dip recipes that accompanied my Easter Ham! I love these dishes, but the typical mayo version has more fat than my liking.  I substituted the mayo with Fage Greek yogurt and I promise, you couldn't tell the difference.

Valentine’s Dinner for Two: Part 1

Need an idea for a delicious, light meal for Valentine's Day?  Going out can be such a pain on this day because of the reservations, the wait, the traffic, increased prices, and dealing with all the other people who are also trying to have a nice date.  I would much rather be in my comfortable apartment, enjoying our non-marked up wine, and cooking with my significant other.

My friend Ani and I thought it would be fun to to make a sample Valentine's Day dinner for two.  For those of you who want to stay in but haven't decided what to make, here you go!  Our rotic dinner consisted of a Crimson Beet Salad, Stuffed Mushrooms and Chocolate Angel Food cake.

Walnut Sweet Potato Salad

Happy February!  Did you know that February is National Sweet Potato Month? (and also Fiber Focus month… just sayin')

I could go on about these guys, I loooove sweet potatoes.  Whether roasted, mashed, baked… I'll take 'em!  They are a great source of carbohydrates and they are deliciouseven better than regular taters in my opinion.  One of my other posts on sweet potatoes discusses the health benefits, but here is a little refresher:

Green Ginger Broccoli Soup (vegan friendly)

I made my very first blended soup!  This has been a long time coming.  I got an immersion blender awhile ago to make soups, and I am only now trying it out.  I got so hooked on making smoothies that I never made soup.  I was a little weary about this soup as it is 95% veggies and not much else.  However, I was pleasantly surprised and gulped down about 3 bowls of it.  This will definitely, definitely be made again.  It was delicious and was a great detoxifier!

Asian-Style Eggplant

Like I have mentioned before, I love eggplant.  Anytime I see it on a menu, I automatically want whatever it is.  And when I see asian-style spicy eggplant?  That is just a done deal. I'm sold.

I attempted to re-create this dish and it turned out very good.  I would add pepper flakes to to increase the spicyness, but overall, it was a success!

Kale has become quite the popular vegetable these days and I have been experimenting with it for some time.  I haven't written about it because, to be honest, every time I made it, I couldn't get myself to like it.  Until now.  I found this vegetable to be very tough to eat and bitter for my taste.  However, I recently made kale chips and fell in love with them.
