Texas VegFest is only two days away and I can't wait! I am volunteering in the morning, and I can't wait to see the festivities and hear the speakers. After volunteering, I can't wait to eat myself silly. Did I mention I can't wait?

Con’ Olio is a quaint olive oil and balsamic vinegar shop in the heart of downtown Austin. After reading about the shop and hearing the buzz on their incredibly fresh olive oils, I decided to pop in and see for myself.
I can't even begin to tell you how busy I've felt in the last few weeks. I haven't blogged in almost two weeks and it makes me really sad. I don't understand how bloggers can update their blogs multiple times a week, and the ones that blog every day… that just blows my mind.
I made the simplest Asian style dinner the other night and it was exactly what I wanted. I am in the midst of busy season and working more than usual, so when I get home, the very first thing I want to do is get in my PJ's and the last thing I want to feel is hungry. Which means, I need dinner, and I need it fast.
This festival will be alongside (the beautiful) Lady Bird Lake in Austin, TX, and a fun event in celebration of all the benefits of a plant-based diet. Vegetarianism does not only improve health, but also preserves the environment and protects animals. For those non-vegetarians/vegans, I know you are thinking, "Well, I eat meat. I love meat." The other day I had the most exhilarating, freeing and beautiful run. I heard about this trail, and a couple of people I met the other night wanted to go running. I went in the afternoon (yes, I thought I was crazy to go at that time, but apparently, there are other crazy people too!) The entire trail is about 10 miles and is one big loop around Lake Lady Bird. Everything was incredible- the lake, the dirt trail, the bridges, the greenery, and the views from the bridges.
