I discovered Green Vegetarian Cuisine in San Antonio just a few weeks ago and I wish I knew about it earlier. It is the only vegetarian and kosher restaurant in the area. A lot of their food options are clean, high in fiber, high in protein and with loads of veggies. I love it. Another week of travel called for another crock-pot adventure. This only took about 30 minutes to throw together, and it was done by the end of the day and ready to be packed for the road!
This lentil-y, fiber-filled, veggie filled, spice-infused stew has been hearty and completely satisfying this week. I got the original recipe from Our Best Bites but made a few alterations; one of them was to add more veggies. I added some peas and butternut squash!
I can't even begin to tell you how busy I've felt in the last few weeks. I haven't blogged in almost two weeks and it makes me really sad. I don't understand how bloggers can update their blogs multiple times a week, and the ones that blog every day… that just blows my mind.
I am still traveling for work and I am constantly eating restaurant food. My body is craving some clean food. So last weekend, I decided to use my slow cooker to make something healthy and packable for the road. I came across Kalyn's Kitchen's Greek Lentil Soup and it was a done deal.
And YUM. I have eaten this soup for a few meals now, and I'm still not sick of it!
Need an idea for a delicious, light meal for Valentine's Day? Going out can be such a pain on this day because of the reservations, the wait, the traffic, increased prices, and dealing with all the other people who are also trying to have a nice date. I would much rather be in my comfortable apartment, enjoying our non-marked up wine, and cooking with my significant other.

Happy February! Did you know that February is National Sweet Potato Month? (and also Fiber Focus month… just sayin')
I could go on about these guys, I loooove sweet potatoes. Whether roasted, mashed, baked… I'll take 'em!
