How to Make Homemade Greek Yogurt

I have finally, finally, finally made my own Greek yogurt!  One of my co-workers, who I miss dearly on my team, gave me this recipe awhile ago and I finally got around to making it.  I am going to make this all the time!  It is so easy and a much cheaper option.

Despite my paranoid attempt to get everything exactly correct (timing, temperatures, etc), I now realize that I was over-thinking everything.  It is so simple!  All you do is heat the milk, let it cool, add starter, let it sit overnight, strain, and voila.  It's just one big waiting game.

Vegetarian Greek Lentil Soup


I am still traveling for work and I am constantly eating restaurant food.  My body is craving some clean food. So last weekend, I decided to use my slow cooker to make something healthy and packable for the road.  I came across Kalyn's Kitchen's Greek Lentil Soup and it was a done deal.

And YUM.  I have eaten this soup for a few meals now, and I'm still not sick of it!

Green Ginger Broccoli Soup (vegan friendly)

I made my very first blended soup!  This has been a long time coming.  I got an immersion blender awhile ago to make soups, and I am only now trying it out.  I got so hooked on making smoothies that I never made soup.  I was a little weary about this soup as it is 95% veggies and not much else.  However, I was pleasantly surprised and gulped down about 3 bowls of it.  This will definitely, definitely be made again.  It was delicious and was a great detoxifier!

Steam-Fried Eggplant Pasta

I made the simplest Asian style dinner the other night and it was exactly what I wanted.  I am in the midst of busy season and working more than usual, so when I get home, the very first thing I want to do is get in my PJ's and the last thing I want to feel is hungry.  Which means, I need dinner, and I need it fast.
