Indian-Spiced Butternut Squash Lentils

Another week of travel called for another crock-pot adventure.  This only took about 30 minutes to throw together, and it was done by the end of the day and ready to be packed for the road!

This lentil-y, fiber-filled, veggie filled, spice-infused stew has been hearty and completely satisfying this week.   I got the original recipe from Our Best Bites but made a few alterations; one of them was to add more veggies.  I added some peas and butternut squash!

Steam-Fried Eggplant Pasta

A Cornmeal Lesson and Butternut Squash Polenta Bake

I last posted about the Spinach and Brown Rice Casserole at the dinner party and promised the other recipes.  In addition to the casserole, we put together a Butternut Squash Polenta bake and I loved the colors in this dish.  The squash, polenta and basil combined to make a very aesthetically pleasing addition to the table.

Benefits of Japanese Soba Noodles

I am obsessed.  I can’t. stop. eating. these.  I’m not sure what it is.  Between the chewy texture, hearty taste, salty flavor, thin-ness of the noodles and intriguing color- I can't resist.  They were so good that I ended up eating half of the batch before I even tossed it with a sauce or seasoning.  Now I'm probably building them up (I always do that) but really, you need to try!
