Happy Belated Easter! I hosted my first Easter brunch on Sunday and had the best time (and ate like an extreme carnivore). Although hosting can be stressful, I love having people over for potlucks and dinners. What better combination than delicious food and great company?

Indian-Spiced Butternut Squash Lentils
Tofu Soba Noodle Stir-Fry
I can't even begin to tell you how busy I've felt in the last few weeks. I haven't blogged in almost two weeks and it makes me really sad. I don't understand how bloggers can update their blogs multiple times a week, and the ones that blog every day… that just blows my mind.
Eggplant Tofu Caprese (vegan friendly)
Eggplant, tofu, basil— three of my favorite food items that we combined into a delicious caprese tower.
Red Wine Risotto
I had my first attempt at risotto the other night and it was quite successful. I have wanted to make risotto for a long time, and when I saw What's Gaby Cooking's Red Wine Risotto, I knew it was time.
Whole Wheat Vegetarian Pasta Nests
This weekend, in honor of Valentine's Day, some of my girlfriends got together for some food, wine and sweets (what's a girls night without wine and sweets?) It was a fun night as we exchanged gifts with our "secret cupids" and chowed down on home-made goods!

Steam-Fried Eggplant Pasta
I made the simplest Asian style dinner the other night and it was exactly what I wanted. I am in the midst of busy season and working more than usual, so when I get home, the very first thing I want to do is get in my PJ's and the last thing I want to feel is hungry. Which means, I need dinner, and I need it fast.

A Cornmeal Lesson and Butternut Squash Polenta Bake
I last posted about the Spinach and Brown Rice Casserole at the dinner party and promised the other recipes. In addition to the casserole, we put together a Butternut Squash Polenta bake and I loved the colors in this dish. The squash, polenta and basil combined to make a very aesthetically pleasing addition to the table.
Spinach, Brown Rice and Feta Casserole
My friend, Rebecca, and I made dinner for some friends, marking my first dinner party here in Austin! Since leaving Los Angeles, I have really missed cooking and having friends over. It was amazing to cook and spend more time with some of girls I have met here! Plus, everyone chipped in with the cooking! 🙂
Benefits of Japanese Soba Noodles
I am obsessed. I can’t. stop. eating. these. I’m not sure what it is. Between the chewy texture, hearty taste, salty flavor, thin-ness of the noodles and intriguing color- I can't resist. They were so good that I ended up eating half of the batch before I even tossed it with a sauce or seasoning. Now I'm probably building them up (I always do that) but really, you need to try!
