How to Make Homemade Greek Yogurt

I have finally, finally, finally made my own Greek yogurt!  One of my co-workers, who I miss dearly on my team, gave me this recipe awhile ago and I finally got around to making it.  I am going to make this all the time!  It is so easy and a much cheaper option.

Despite my paranoid attempt to get everything exactly correct (timing, temperatures, etc), I now realize that I was over-thinking everything.  It is so simple!  All you do is heat the milk, let it cool, add starter, let it sit overnight, strain, and voila.  It's just one big waiting game.

Green’s Sweet and Spicy Kale Salad

I discovered Green Vegetarian Cuisine in San Antonio just a few weeks ago and I wish I knew about it earlier.  It is the only vegetarian and kosher restaurant in the area.  A lot of their food options are clean, high in fiber, high in protein and with loads of veggies.  I love it.  Not only is their food healthy, but they are eco-friendly with their energy efficient building, recycling bins and biodegradable packaging.  I highly recommend making a stop here!  Here are my favorites:

Skinny Banana Bread w/ Chia Seed

I have my new banana bread recipe from here on out.  I am a sucker for banana bread, but I know it is usually made with a lot of butter and a lot of sugar.  This one I made has:

  • No butter (used applesauce and coconut oil)
  • No white sugar (used agave nectar)
  • Chia seeds
  • and is whole wheat

And this is why I have named this… "Skinny" Banana Bread!

Texas VegFest is only two days away and I can't wait!  I am volunteering in the morning, and I can't wait to see the festivities and hear the speakers.  After volunteering, I can't wait to eat myself silly.  Did I mention I can't wait?

Mayo-less Broccoli Cashew Salad and Spinach Dip

As promised, I have include the Broccoli Cashew Salad and Spinach Dip recipes that accompanied my Easter Ham! I love these dishes, but the typical mayo version has more fat than my liking.  I substituted the mayo with Fage Greek yogurt and I promise, you couldn't tell the difference.
